Broccoli Tots – These are Legit!

I’m always looking for inventive ways to cook veggies, and this recipe is just that! If your kids don’t like to eat their vegetables this is a perfect recipe to try. Or, if you are just tired of eating bland, tasteless greens then try this!

You’ll Need:

12 oz. of broccoli florets (use fresh,frozen has too much water content)
1/2 medium onion (minced)
1/2 Tbsp. garlic powder
2/3 cup shredded cheese (use whatever you like, I use cheddar)
1 egg beaten
2/3 cup Italian breadcrumbs
2 Tbsp. grated parmesan cheese
salt and pepper to taste
2 tsp. Sriracha (optional)


Let’s Get Cooking!

Preheat your oven to 400 degrees.
Fill a medium pot with water and salt aggressively, bring to a boil and blanch the broccoli
for about 4 minutes or until soft.
Drain and then chop, or use a food processor and pulse until it’s chopped finely.
Now, to a bowl add the broccoli, onion, garlic powder, egg, cheeses, salt and pepper (to taste) and Sriracha.
Mix it up, and let it sit in the fridge for about 15 minutes (it will be easier to handle).
While the mixture is in the fridge, spray a baking sheet with non-stick spray.

Just shape them with your hands. (You can also just form them into round balls).

Bake for 7-8 minutes on each side, or until golden brown.
Serve them with some ranch for a fun twist!
