Cast Iron Pan Seared NY Strip Steak

Usually I love a thick, beautiful steak cooked on a charcoal grill, but the other day it was raining…so grilling was not an option. I decide to cook these fantastic NY Strip steaks in my cast iron skillet. The result was Mmmmmmm!!! So let’s get cooking!

 
You’ll Need:

2- 10 oz. NY Strip Steaks (about 1.5″ thick)
2 Tbsp. olive oil
3 Tbsp. unsalted butter
1 shallot (cut in half)
2 cloves of garlic (just smashed with your knife)
2 sprigs of thyme (optional)
salt and pepper

Preheat oven to 425 degrees, rub steaks with oil, and then salt and pepper vigorously. When your cast iron skillet gets screaming hot (almost smoking) place the steaks in. Cook 2 minutes on each side, then add shallots, garlic (thyme if used) and butter. Push the steaks up so that the butter pools in the bottom of the skillet, and then baste, baste, baste for another minute. Then the whole skillet goes into your pre-heated oven for 5 minutes. They will be done to a beautiful medium rare at this point. If you like your steak a bit more done, leave in oven for another minute.
