It’s no secret that chicken thighs are the best part of the chicken! Even if you think that they’re not…try them again. They are delicious! And, now I have an easy, fool proof recipe that’ll have you saying to yourself, “I never thought I like chicken thighs!” There’s lots of recipes out there that say that you have to sear your chicken skin side down in a cast iron pan to get it crispy then finish it in the oven. Not so, my friends!

Just do this:

Get 4 chicken thighs – pat them with a paper towel to make sure they’re dry
Now use whatever spices you like (plus salt and pepper, of course) to season your chicken thighs:
I use thyme (not too much, because it can be over powering), garlic powder, onion powder and paprika.
Season both sides well.

Preheat your oven to 375 degrees.
Drizzle about 2 Tbsp. olive oil into your baking pan
Arrange the chicken skin side up – then drizzle more olive oil on top (about 1 Tbsp.)
If you’re feeling creative, add a few small red or white or fingerling potatoes to the baking pan too! Potatoes cooked in chicken fat- what’s better than that!!!
Into the oven it goes (on the bottom rack), for about 30 minutes. If after that time the skin isn’t as crispy as you like it, move them up to the middle rack and broil for 5-7 minutes more.

Perfectly juicy inside, crispy on the outside…a one pan weeknight dinner never was so easy!
