When prepared correctly, lamb is just scrumptious! I’ve tweaked this recipe over the years and think that I’ve come up with a surefire way that you’ll love it! And, if you’re having a dinner party, it’s the perfect way to show off your cooking skills!
Let’s get to it!
You Will Need:
2-2 1/2lb. rack of lamb (cut in half)
3/4 cup Italian seasoned bread crumbs
3-4 Tbsp. spicy brown mustard (you can use dijon, but I like the bold flavor of spicy brown)
1 teaspoon garlic powder
1 teaspoon dried parsley
1 teaspoon rosemary
1 teaspoon coriander
Salt and pepper
2-3 Tbsp. olive oil
Time to Cook!
Preheat oven to 425 degrees.
Score the fat layer with a sharp knife. Make lines diagonal one way, then the other way. Salt and pepper generously.
Heat olive oil in a pan and sear until golden brown on all sides…about 3-4 minutes. Transfer the pan to oven and roast for 10 minutes.
Meanwhile on a flat plate combine all dry ingredients: bread crumbs, garlic powder, parsley, rosemary and coriander.
After 10 minutes take the lamb out of the oven and let it rest for 4-5 minutes- but leave the oven on.
Then brush all over with the mustard (be generous), roll around in the bread crumb mixture so that all the lamb (excluding the bones) is covered.
Pop it back in the oven for another 4-5 minutes (for medium rare) or 7-8 minutes (for medium) and serve.
