Like me, I am sure your weeknight cooking is pretty much trying to whip up something fast and easy. But, I’m here to tell you it still can be delicious! This one baking sheet recipe is perfect for any weeknight meal! It’s quick, easy and you’ll only use one pan!
This is what you need to make it:
Pork Tenderloin (about 1.5 lbs.)
Carrots – (I enjoy the carrot sticks already cleaned and cut)
Potatoes (small white or red ones, cut in half)
(use enough carrots and potatoes to fill up the space around your pork
tenderloin on the baking sheet- see below)
1/2 cup light brown sugar (you can also use dark)
1-2 Tbsp. Sriracha (depending on how spicy you like it)
garlic powder (about 2 Tbsp)
cumin (about 1 Tbsp.)
chili powder (about 1 Tbsp.)
salt and pepper (of course)
4 Tbsp. olive oil
Preheat oven to 375 degrees
Put olive oil on a large baking sheet
Poke the pork tenderloin all over with a knife
(don’t be shy, go all the way through it), this will let all the flavors in
Rub the pork all over with salt and pepper,
1 Tbsp. garlic powder, cumin and chili powder
In a small bowl mix the brown sugar, 1 Tbsp. garlic powder
and sriracha until it forms a paste
Rub that mixture all over the top and sides of your pork tenderloin
Place pork in the middle of the baking sheet
Toss potatoes and carrots in a little olive oil, salt and pepper
and then place all around the pork tenderloin
Cook about 25 minutes, (half way through, turn over vegetables) or until your pork reaches 160 degrees internally and potatoes and carrots are fork tender, then increase the oven heat to broil for another 3-4 minutes so the top of the pork gets golden brown.
A little sweetness and spiciness from the rub will ooze down in to the vegetables! Yummmy!
