Thai Rice Noodle Salad

I live in Southwest Florida, and it is HOT in the summer! So, here’s a recipe that you don’t even have to turn on the oven or the stove to make. It’s cold, fresh, bright and tasty. Let’s get cooking!

You Need:

7 oz. thin rice noodles
1 clove garlic, minced
1/3 cup rice vinegar
2 Tbsp. fish sauce
1 Tbsp. Asian chili paste
2 tsp. brown sugar
1/2 tsp. salt
1/2 medium onion, minced
1/2 head of cabbage, shredded
1 carrot, shredded
Just shy of 1 tsp. sesame oil (it’s strong…be careful how you use it)
1/2 jalapeno, minced
1 small handful of cilantro, chopped small
Juice of 1/2 a lime

Get your rice noodles into a bowl of hot water and let sit there for 5-10 minutes (until soft), rinse thoroughly and drain. Set aside.
In a large bowl combine garlic, rice vinegar, fish sauce, chili paste, brown sugar, salt, onion, sesame oil, jalapeno and lime juice, then add the cabbage, carrot, cilantro and rice noodles. Mix until combined.
