I make the cannoli cream, which is really simple, and put it between two vanilla wafers. This recipe is not only delicious, but it makes a lot, and it’s always a hit! AND, it’s a NO BAKE dessert!
Ingredients
- 1 cup whole-milk ricotta cheese
- 1/4 cup confectioners’ sugar
- 1 tablespoon granulated sugar
- 1/4 teaspoon vanilla extract
- 1 package (12 ounces) vanilla wafers
- 1/2 cup miniature semisweet chocolate chips
- Additional confectioners’ sugar for sprinkling at the end
Directions
- In a small bowl, mix ricotta cheese, confectioners’ sugar, granulated sugar and vanilla until blended. Fold in chocolate chips. Spread 1 teaspoon filling on bottom of half the wafers; cover with remaining wafers.
- Sprinkle with powdered sugar. Let stand until set, about 10 minutes.
