Perhaps one of the best things you will ever eat- these chicken kofta meatballs are delicious! Herbaceous, soft on the inside and crispy on the outside and full of flavor! Serve in a pita with a creamy tzatziki (recipe also below), some sliced tomato and onion and you will literally be in food heaven!
WHAT YOU’LL NEED:
1 medium onion diced small
2 garlic cloves minced
3 tablespoons olive oil
1 teaspoon salt
1 teaspoon coriander
1 teaspoon cumin
1/2 teaspoon red pepper flakes
1/2 cup parsley leaves
1/4 cup mint leaves
1 pound ground chicken
GET COOKING:
Preheat your oven to 425°F. Pulse onion and garlic in a food processor until it’s all chopped finely. Heat oil in a large skillet over medium heat. Add the onion and garlic mixture with 1/2 teaspoon of salt stirring well until softened and lightly browned (about 5-7 minutes). Add cumin, coriander and red pepper and cook until fragrant (about 45 seconds) stirring frequently. Then, put this mixture in a large bowl and let it cool for a couple of minutes. While that’s cooling, use the food processor to pulse the parsley and mint until it’s finely chopped. Put that in the bowl with the onion and garlic mixture. Now, add the chicken to the bowl with 1/2 teaspoon of salt. Mix all together, just to combine. Do not over mix. Divide into 10 equal portions, shape into little ovals (like little footballs), tapering the ends. Place koftas on a baking sheet lined with parchment paper or olive oil spray. Bake to 165°F, turning once- about 8 minutes a side.
Easy Tzatziki
- 1 cup full fat sour cream
- ½ medium cucumber
- ½ teaspoon garlic powder
- 2 tablespoons chopped fresh dill
- 1 tablespoon lemon juice
- Salt and pepper to taste
