If you’re looking to make a boozy, chocolatey treat, these Rum Balls are just the thing to fill that craving! They are scrumptious…and boozy! And, the best part- no baking!
INGREDIENTS
- 3 cups vanilla wafers (a whole box of vanilla wafers)
- 1 cup confectioners sugar (plus more for rolling)
- 2 tablespoons cocoa powder
- 2 tablespoons light corn syrup
- 1/3 cup rum, or more!
INSTRUCTIONS
- Into the food processor with the vanilla wafers pulsed into fine crumbs. You can also dump the vanilla wafers into a baggie and it them with a rolling pin until they’re fine.
- Add the confectioners sugar, cocoa and corn syrup and pulse till combined.
- Add 1/3 cup rum and pulse again to combine. If necessary, slowly add more rum to the food processor until the mixture comes together and forms a mass around the blade or holds together when you pinch it.
- Using a teaspoon, scoop out and roll balls with your hands and drop and roll the balls to coat in confectioners sugar. Transfer to an airtight storage container until you are ready to serve them. Store in the fridge or freeze for up to 3 months. Bring to room temperature briefly before serving.
