Charred Onion Dip-Little Life Bytes

Once make this easy dip, you’ll never buy a pre-packaged one again! Not even the soup packet mixed with sour cream even comes close! This dip is packed with onion flavor! You’re gonna love it!

You Will Need:

2 shallot, sliced thin

2 leeks, the white part sliced thin

4 scallions, sliced thin including the green part

3 tablespoons olive oil

2 Tablespoons of finely chopped chives (for garnish)

Salt & pepper (to taste)

2 garlic cloves, grated

1 cup mayonnaise

1 cup sour cream

4 teaspoons fresh lemon juice

2 teaspoon chopped fresh thyme, plus more for serving

1 teaspoon chopped fresh oregano ( I know it sounds weird coming from an Italian, but I prefer to use Greek oregano)

Up to 3 tablespoons buttermilk to thin out the dip if needed

Get To Cooking!

Turn on the broiler. Toss the shallots, leeks, and scallions with the olive oil; season with salt and pepper. Broil it until it’s charred, 10–15 minutes, stirring several times during the cooking process. Make sure there are charred bits throughout!  Let it cool. Mix in the garlic, mayonnaise, sour cream, lemon juice, and herbs. Thin with buttermilk if needed; taste, and then season with salt and pepper. Garnish with chives. Serve it with chips, crackers, pretzels, even toasted bread or fresh veggies!
