These oatmeal cookies are SO good! They’re soft and chewy, and full oats and other goodies! They’re a hearty, sweet treat! You’re going to love them!
INGREDIENTS
- 1 large egg
- 1/2 cup unsalted butter (1 stick), very soft
- 1/2 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 1/2 cups old-fashioned whole rolled oats (not instant or quick cook)
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt, or to taste
- 1 cup semi-sweet chocolate chips or add some raisins and walnuts too!
INSTRUCTIONS
- Preheat oven to 350F, line a baking sheet with parchment or spray with a little cooking spray.
- Add the egg, butter, sugars, vanilla, and mix aggressively for about 90 seconds, or until smooth and light.
- Add the oats, flour, baking soda, salt, and mix to combine.
- Fold in chocolate chips, raisins, walnuts, etc.
- Form mounds of about 2 Tablespoons and place on your baking sheet spaced about 2″ inches apart.
- Bake for 11-13 minutes or until edges have set and tops are just set, even if slightly undercooked- don’t overbake. Cookies will firm up as they cool.
- Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a rack. Pack in an airtight container to store.
