These oatmeal cookies are SO good! They’re soft and chewy, and full oats and other goodies! They’re a hearty, sweet treat! You’re going to love them!

INGREDIENTS

  • 1 large egg
  • 1/2 cup unsalted butter (1 stick), very soft
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 1/2 cups old-fashioned whole rolled oats (not instant or quick cook)
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt, or to taste
  • 1 cup semi-sweet chocolate chips or add some raisins and walnuts too!

INSTRUCTIONS

  1. Preheat oven to 350F, line a baking sheet with parchment or spray with a little cooking spray.
  2. Add the egg, butter, sugars, vanilla, and mix aggressively for about 90 seconds, or until smooth and light.
  3. Add the oats, flour, baking soda, salt, and mix to combine.
  4. Fold in chocolate chips, raisins, walnuts, etc.
  5. Form mounds of about 2 Tablespoons and place on your baking sheet spaced about 2″ inches apart.
  6. Bake for 11-13 minutes or until edges have set and tops are just set, even if slightly undercooked- don’t overbake. Cookies will firm up as they cool.
  7. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a rack. Pack in an airtight container to store.
